This Apple Pie Enchilada recipe is one of my favorite things to cook. I cook it often, alternating between apple pie filling and peach pie filling. I have canned a lot of apple and peach pie filling from my own trees the last two years. When I can find a great recipe that uses items that I have canned myself, it makes my day! This delicious apple pie enchiladas recipe is a quick recipe to make and also very delicious.
Steps to Make the Apple Pie Enchiladas
- Spoon about a quarter cup of pie filling in the center of each tortilla. Roll up the tortilla, tucking in the edges, place seam side down in a greased baking dish and sprinkle with cinnamon.
- Combine butter, white sugar, brown sugar and water in medium saucepan over medium heat.
- Bring to a boil, stirring constantly, reduce heat and simmer 2 minutes. Add the vanilla.
- Pour sauce over the enchiladas and let sit for 45 minutes.
- Bake at 350 degrees F for 30 minutes.
Detailed Steps to Make the Apple Pie Enchiladas
Spoon about a quarter cup of apple pie filling into the center of the tortilla. Use the 8-inch flour tortillas for this recipe. Whole wheat tortillas would also work, but corn tortillas are not recommended. I only make four tortillas for my recipe and I use my homemade apple pie filling from a pint jar. You can also use canned pie filling from the store, which contains more pie filling and you can also make the recipe with 6 tortillas.

Roll up the tortillas, and tuck in the edges.

Place the tortillas seam side down in the greased baking dish and sprinkle with cinnamon powder. Extra cinnamon can also be added to the fruit filling.

Combine the 1/2 cup butter, 1/2 cup sugar, 1/2 cup brown sugar, and 1/2 cup water in a medium saucepan. I heated the butter in the microwave and added the melted butter to the mixture. Bring to a boil, stir it constantly, reduce the heat, and let it simmer for two minutes, then add the teaspoon of vanilla. This is a great way to produce a delicious homemade caramel sauce to add to the top of the sweet apple enchiladas.


Pour the caramel sauce over the apple pie enchiladas and let sit for 45 minutes. This allows the sauce to be absorbed by the tortillas and turn it into a yummy dough like texture.

Bake the delicious enchiladas in an oven preheated to 350 degrees for 30 minutes or until golden brown.

Delicious dessert that is a cross between Mexican Enchiladas and Apple Pie!
Ingredients
- Apple Pie filling - You can use a store-bought 21 oz can or your own homemade canned pie filling
- 8-inch Flour Tortillas - You can use 4 to 6 tortillas
- 1/2 c. White Sugar
- 1/2 c. Brown Sugar
- 1/2 c. Butter
- 1/2 c. Water
- 1 - 2 tsp cinnamon
