Canning Recipe for Healthy Bone Broth Chicken Soup

This canning recipe for healthy bone broth chicken soup is a great recipe and makes a wonderful tasty soup that is great to have on your pantry shelves for any meal, but especially when you are sick with the cold or flu. Everyone knows that chicken soup is the best thing to eat when you are sick, especially homemade chicken soup! Especially with healthy homemade bone broth! But who wants to actually make chicken soup when they are sick? No one! By making and canning this delicious, EASY, recipe, you will have this delicious healthy soup whenever you want or need it. Plus it is great as a gift when a friend is not feeling great!

One of the best things about this recipe, is that I made it with a rotisserie whole chicken!

So easy! I used it for the chicken and then made the chicken bone broth from the leftover bones and chicken carcass and vegetable scraps. I used my recipe for instant pot bone broth.

Ingredients for Making Healthy Bone Broth Chicken Soup

  • 5 cups shredded chicken
  • 2 1/2 cups chopped carrots
  • 2 1/2 cups chopped celery
  • Bone Broth

Detailed Steps for Making Healthy Bone Broth Chicken Soup

Remove the chicken meat from the rotisserie chicken. If not using a rotisserie chicken, cook about 3 large chicken breasts.

Use the chicken bones, carcass and skin to make instant pot homemade chicken broth using this blog post recipe. This recipe takes a little over 2 hours to make the homemade broth. Other options are to use already prepared bone broth or regular chicken broth.

Add about 1 cup of cooked chicken to each jar filling about 1/2 full. Like I said, I used a rotisserie chicken. About one rotisserie chicken was enough.

Chop up carrots into small pieces. I used baby carrots.

Slice up celery into small pieces.

Add about 1/2 cup each of carrots and celery to the jars.

Add the bone broth or regular chicken broth to the jars, leaving 1-inch head space. Make sure it is hot broth. Below is a picture of dipping my instant pot bone broth from the bowl after straining out the bones and vegetables.

Wipe rim of the jar, remove the air bubbles, and add the canning lids and screw bands.

Chicken or any meat are low acid foods and required canning in a pressure canner. See my article on beginners guide to canning for a complete guide on canning.

Place the filled jars into the pressure canner and process according to your canner’s instructions. Process pint jars for 75 minutes. Process quart jars for 90 minutes.

When the canning process is complete and the canner has had time to depressurize, remove the hot jars with a jar lifter and place jars on a dish towel on the counter and do not disturb for 24 hours.

  1. Add 1 cup shredded chicken to each canning jar
  2. Add 1/2 cup each celery and carrots to each jar
  3. Add bone broth (or regular chicken broth) to each jar filling to 1-inch headspace
  4. Wipe the rims of the jars and add the canning lids
  5. Process in a pressure canner for 75 minutes for pints, 90 minutes for quarts
  6. When the canning process time is complete and the canner has had time to depressurize, remove the hot jars with a jar lifter and place the canning jars of hot beans on a dish towel on the counter and do not disturb for 24 hours.
