This canning recipe for pickled radish is a great way to prepare your radishes. They are so fun and easy to grow in your garden and all come ripe at the same time, resulting in an abundance of radishes.

Sometimes it is hard to use them all up or know what to do with them. Pickling and canning radishes is a great way to preserve them and pickled radish have a unique great flavor.
Ingredients
- Bunch of Radishes
- 1 Cup White Vinegar: Apple cider vinegar is an option
- 1/2 Cup Sugar
- 1/2 Cup Water
- 1 tsp Canning Salt
- 2 Tsp Pickling Spice
- Optional is to add red pepper flakes for spicy pickled radishes
Steps in Preparing and Canning Pickled Radishes
The first step for the pickled radish recipe is to pick the fresh radish from your garden.

The next step is to give the radishes a good rinse and get all of the dirt off.

Then slice the radishes in thin slices. You can use a mandoline slicer to make the radish slices thinner.

Add the sliced radishes to the canning jars.

In the meantime bring the water, vinegar, sugar, canning salt and pickling spices to a boil in a small saucepan to make the pickling liquid.

Pour the hot liquid over the radish slices into the jars and leave 1/2 inch headspace. The brine fills about 1 1/2 pint-sized jar of radishes, and will need to be adjusted to make more. I made a second batch and filled my 3 jars. Remove air bubbles, wipe the jar rim and add the lids.

Add the canning jars to the hot water bath and process at high heat at a full rolling boil for 15 minutes. I use the Ball electric water bath canner and love it.
Remove the hot jars from the boiling water bath with a jar lifter and place them on a dish towel on the counter. Do not disturb for 24 hours.

- 1 bunch radishes

Instructions
- Slice the radishes thinly
- Place the radish in canning jars
- Bring the vinegar, sugar, water, salt, and pickling spice to a boil in a small saucepan
- Add the brine to the jars
- Leave 1/2 inch headspace
- Remove air bubbles, wipe rims, and add lids
- Process in a hot water bath at a rolling boil for 15 minutes
- Remove jars and let sit for 24 hours
