Every time I try a new pickled egg recipe, it becomes my new favorite. Same applies for this Cowboy Candy pickled egg recipe – they are so wonderfully delicious!
What are pickled eggs? Just what it sounds like – a peeled hard-boiled egg that is soaked in a pickling brine made from water and vinegar with some sugar and salt. The brine is just poured over the hard-boiled eggs and the eggs absorb the wonderful flavor.
Not sure if you have heard of Cowboy Candy. Cowboy Candy is simply another name for candied jalapeños – jalapeño slices cooked in a sugary syrup for a delightfully sweet and spicy treat. Cowboy Candy is a condiment that can add a spicy kick to any dish.
This amazing sweet and spicy Cowboy Candy Recipe is so delicious. These candied jalapenos are the perfect balance of sweetness and spiciness. The sugar combines with the sharp heat from the jalapeno, turning it into this mouthwatering wonderful condiment. The spicy jalapeños are coated in a sugary glaze, so each bite is a mix of sweet, spicy, and tangy.

Also try my Pineapple Cowboy Candy Recipe. Pineapple Cowboy Candy is a wonderful combination of the sweetness of pineapple with the zesty heat of jalapenos, combined with vinegar, sugar and spices. It creates a delicious condiment that is so remarkably delicious!

Cowboy candy pickled eggs use that same sort of spicy, sweet, tangy flavor profile. With the help of cider vinegar, cayenne pepper, and sugar you get that same flavor combination.
Making pickled eggs is also a great way to preserve eggs from your hens if you have an abundance!

Pickling makes a somewhat bland hard-boiled egg burst with flavor! This method has been used to preserve eggs for many years.

Today pickled eggs are commonly found at bars, convenience stores, and the grocery store, but they’re so easy to make yourself!
Pickled eggs can be eaten after a couple hours, but for best results let them pickle for 5-7 days to develop more flavor. The pickled eggs should be stored in the refrigerator.
You can use different containers for the eggs. A quart jar holds about 7 to 10 eggs without squishing them. A quart requires about 2 cups of the brine.

- OR 8 hard-boiled eggs divided between 2 pint wide-mouth jars
- 2 cups Apple Cider Vinegar

Detailed Steps for Cowboy Candy Pickled Egg Recipe
The first step is to hard-boil the eggs. A great way to hard-boil eggs is with this instant pot recipe. Peel the eggs.

Slice the jalapenos peppers about 1/4 inch thick. If you touch the inside of the jalapenos, wear gloves. This jalapeno corer works great! You can leave the seeds in if you want more heat, I remove the seeds with the corer.

Prepare the pickling brine by adding the vinegar, sugars, seasonings and jalapenos to a saucepan and heat until sugars are dissolved and the jalapenos are tender.
Place the eggs in the jar and use a slotted spoon to layer with the jalapenos.
Pour the brine over the eggs to fill the jar up to 1/4 inch headspace.

Add the lid and when the eggs cool to room temperature place in the refrigerator. Pickled eggs last 3 to 4 months in the refrigerator.

I made cowboy candy last year and had so much of the liquid remaining that I canned the liquid separately so I have many jars on hand. Can I just pour this back into a pot and bring to a boil again before pouring over the hard boiled eggs and follow the remaining steps from there?
I think so yes. In my opinion the recipe is just cowboy candy brine mixed with vinegar. I would use one cup of your brine and one cup of apple cider vinegar. Great question! Thank you!
I used my Cowboy candy peppers and brine I saved from this year. Just layered eggs pepper s to the top of quart jar. Then poured brine over the top. Never heated it up. Came out great. Put them in fridge for couple weeks before tasting. Thanks for idea and recipe.
You are welcome! Thanks for the comment and that is a great idea to use the brine. I have some that I canned that I can use. I think I may try to make BBQ sauce out of it.
Hi Terri! I always use my extra Cowboy Candy “juice” when canning – to make BBQ sauce. HIGHLY recommend!
I really need to do that! I canned my leftover brine from making actual cowboy candy and need to make BBQ sauce soon! Thanks for the encouragement.
Thank you for a delicious pickled egg recipe, my family can’t seem to get enough of them!!
Thank you so much for the wonderful comment. I am so glad you liked them. It is so surprising how delicious different pickled eggs are! Here is a link to post with my other pickled egg recipes in case you did not see them. I think the buffalo sauce one is my favorite. Plus smoky and balsamic. https://hawkpointhomestead.com/delicious-easy-pickled-egg-recipes/
Is it possible to water bath that recipe? Would love to make them for gifts.
No, pickled eggs cannot be canned, but they can still be given as gifts, I think. Just will not be shelf stable. They do last in the refrigerator for quite a long time. I have read even as long as 3 to 4 months.
Can you use a jar sealer for longer storage !
I really do not know. I have never used a jar sealer so not sure how they would work with pickled eggs. I have seen that pickled eggs can be stored for quite a while in the refrigerator.
WOW, I found you just in time! I have about 30 pullets who are laying sooner than I expected. The pullet eggs make great bite-size pickled eggs. When I saw Cowboy Candy I got excited. I had some syrup left from my batch so I’m pouring it over my eggs. Thank you. Bloody Mary eggs are next. I’m just putting 4 in small jars to try your different flavors.
Thank you so much for the awesome comment! Pickled eggs are amazing and a great way to use your own chicken eggs. Reminds me that I need to make some this weekend. Links to all of my pickled egg recipes are at this link:

I made these cowboy candy pickled eggs this morning. I actually cooked the eggs in my instant pot and peeled and refrigerated overnight. This morning I made the brine and poured over the eggs. My eggs were hard and rubbery. Any ideas on why? I used the 5-5-5 method which I have used for years. Thank you!!!
I am sorry! Do you think it was the method that made them hard and rubbery? Were they like that before the brine? I use the same method and mine seem to turn out ok. I am sorry I am not providing you much help. Oh, I see you peeled them and refrigerated overnight, maybe that is the reason?
