Delicious and Easy Instant Pot Pot Roast Recipe

This delicious and easy instant pot pot roast recipe is one of my favorites. I love using the Instant Pot whenever I can, it is much less cooking time and cooks meat fork tender, especially roast beef! The roast just falls apart with this recipe. 

Using the instant pot cooks roast very tender in a fraction of the time than cooking a roast any other way!

Ingredients for Instant Pot Pot Recipe

  • 3-5 pound Beef Chuck Roast 
  • 1 Tbsp cooking oil
  • Potatoes: Peeled (if preferred) and cut into pieces. Use preferred amount
  • Carrots: Peeled and cut into pieces, or use just baby carrots, like I did. Use preferred amount
  • 2-3 cups Beef Broth
  • Salt and Black Pepper or Steak Seasoning for the Roast

Detailed Steps for Making Instant Pot Pot Recipe

Season the roast with salt and pepper or I actually like to use Aldi brand steak seasoning. Turn the Instant Pot to the sauté function, add about 1 tablespoon of vegetable oil and sear the outside of the beef roast. I use olive oil and I cut my roast into 3 to 4 pieces. This is not mandatory, but gives the roast more flavor.

Add 2-3 cups of beef stock. Scrape the bottom of the pot with a wooden spoon to make sure no brown bits are sticking. This will help prevent a burn notice.

Close the lid, then select manual setting and adjust pressure to high, and set cook time for 60 minutes. After cooking on high pressure, quick release the pressure.

Add potatoes. I use the Yukon gold potatoes and do not peel them.

Add the carrots. I just used baby carrots and added about 3/4 of a pound bag.

Close the lid, then select manual setting and adjust pressure to high, and set cook time for 15 minutes. After cooking on high pressure, quick release the pressure.

Open the lid and serve.

This is one of my family’s favorite meals. It is a great recipe with simple ingredients. A flavorful gravy can be made from the broth with a cornstarch slurry. The delicious pot roast has a ton of flavor and makes a delicious meal for the whole family! It is mouth tender with amazing flavor. Plus leftover pot roast is so great to eat for the next day.

Instructions

  1. Turn the instant pot to sauté mode. Add 1 - 2 tablespoons of olive oil, when hot sear the outside of the roast.
  2. Add beef broth. Scrape the bottom of the pot to remove brown remnants to prevent a burn notice.
  3. Select manual setting adjust pressure to high, and set time for 60 minutes. After cooking on high pressure, quick release.
  4. Add the potatoes and carrots.
  5. Select manual setting adjust pressure to high, and set time for 15 minutes. After cooking on high pressure, quick release.
  6. Serve and enjoy.
