Easy Cherry Tomato Salsa Recipe for Canning

This easy cherry tomato salsa recipe for canning is a great way to use up an abundance of cherry tomatoes. I had so many cherry tomatoes this year and I did not even intentionally plant cherry tomatoes!

I have picked and picked and have so many of these beautiful little cherry tomatoes.

I have been putting some of them in my sauces and salsa, but I decided to make a batch of salsa just using the cherry tomatoes and it turned out to be a very delicious salsa.

Ingredients for Cherry Tomato Salsa

  • 14 cups Cherry Tomatoes: Chopped
  • Hot Peppers: Chopped, I used 4 Anaheim, 2 jalapeno peppers and 1 Poblano
  • 2 Bell Peppers: Chopped, I used a green and yellow bell pepper. Red and orange peppers would also work
  • 1 White Onion: Chopped, Can also use red onion
  • 2 tsp Minced Garlic: Options are garlic cloves
  • 1 cup White Vinegar: Other options are apple cider vinegar, fresh lemon juice, bottled lemon juice or lime juice
  • 2 Tbsp Mesquite Liquid Smoke: The smoke is optional of course, but I love the flavor that it gives
  • 5 tsp Pickling Salt
  • 1/2 cup chopped Fresh Cilantro

Steps for Preparing Cherry Tomato Salsa

First, rinse the cherry tomatoes and remove the stems.

Add the cherry tomatoes whole to a food processor and chop them up. Then add them to a large stock pot.

 I never peel my tomatoes and after running them through a food processor you do not notice the peels. I peeled at one time and found it so time-consuming. If you prefer to peel, here is a good article that shows you how to do that. I also try to avoid peeling my peaches and apples. The only time I peel apples is when I make the apple pie filling. Here is an apple/potato electric peeler I purchased from Amazon that I love and is a great way to quickly peel apples and potatoes!

Cut the peppers up and deseed and chop the peppers in a food processor. Wear gloves if you are going to touch the inside of the hot peppers.

How many and what peppers are optional, depending on how much heat you like in your salsa. For spicier salsa, use more jalapenos or serrano peppers. I like mild salsa, so I use mainly Anaheim peppers.

Chop the cilantro and onion in a food processor and add to the stock pot. Add the remaining ingredients. Heat to a slight boil and reduce heat and simmer for 15 minutes or more.

Steps for Canning the Cherry Tomato Salsa Recipe

Ladle the hot salsa into canning jars leaving 1/2 inch headspace.

Wipe the rims of the jars, remove the air bubbles and place lids and add screw bands. Add the filled jars to the boiling water bath and process jars at a full rolling boil for 20 minutes.

I use the Ball electric water bath canner for water bath canning and love it.  Tomatoes are a low-acid food, therefore are canned using the water bath method.

Remove the hot canning mason jars from the boiling water canner after the processing time with a jar lifter and place the sealed jars on a kitchen towel on the counter. Do not disturb for 24 hours.

  • 2 Bell Peppers: Chopped, I used a green and yellow bell pepper.
  • 1 White Onion: Chopped
  • 2 tsp Minced Garlic:
  • 1 cup White Vinegar
  • 2 Tbsp Mesquite Liquid Smoke: The smoke is optional of course, but I love the flavor that it gives
  • 5 tsp Pickling Salt
  • 1/2 cup chopped Fresh Cilantro

Instructions

    1. First, rinse the fresh cherry tomatoes and peppers

    2. Chop up the tomatoes, peppers, onion, and cilantro with a food processor and add to a large pot

    3. Add the remaining ingredients

    4. Bring to a boil and then simmer for 15 minutes or more.

    5. Ladle the salsa into canning jars

    6. Wipe rims, remove air bubbles, and add lids.

    7. Place the jars in a water bath canner and process at a rolling boil for 20 minutes for pints, 25 minutes for quarts.

    8. Remove the hot jars with a jar lifter and set them on the counter. Do not disturb for 24 hours.
