This Mississippi Pot Roast recipe for the Instant Pot is so good and so easy. Just basically put the ingredients in the pot, seal and turn it on! It is one of my family’s favorite recipes!

I love using the Instant Pot whenever I can, it is much less cooking time and cooks meat fork tender, especially roast beef! The roast just falls apart with this recipe. The pepperoncini peppers add just enough kick and such a good tangy flavor!

Ingredients

  • Beef Roast
  • Beef Broth
  • Au jus mix gravy packet
  • Ranch seasoning packet
  • Butter
  • Pepperoncini peppers

Detailed Steps for Making Instant Pot Mississippi Pot Roast

Turn the Instant Pot to the saute mode, add about 1 tablespoon of olive oil and sear the outside of the roast. I cut my roast into 3 to 4 pieces. This is not mandatory, but gives the roast more flavor.

Add 4 cups of beef broth. Scrape the bottom of the pot with a wooden spoon to make sure no brown bits are sticking. This will help prevent a burn notice. Add the package of au jus gravy mix and ranch dressing mix.

Add the pepperoncini peppers and some pepperoncini juice. How much you add is per preference. 7 to 8 peppers is standard. My family loves an entire 30 oz jar of pepperoncini peppers and the juice to be added.

Select manual setting and adjust pressure to high, and set cook time for 60 minutes. After cooking on high pressure, let it natural release for 15 minutes, then pressure release.

Ingredients

  • 3-5 pound roast
  • 4 cups beef broth
  • 1/2 stick butter
  • Au jus gravy mix packet
  • Ranch seasoning packet
  • 5 - 9 pepperoncini peppers (or more as preferred)
  • 1/2 cup pepperoncini juice (or more as preferred)

Instructions

  1. Turn instant pot to saute mode. Add 1 - 2 tablespoon olive oil, when hot sear the outside of the roast.
  2. Add beef broth. Scrape the bottom of the pot to remove brown remnants to prevent a burn notice.
  3. Add remaining ingredients.
  4. Select manual setting adjust pressure to high, and set time for 60 minutes. After cooking on high pressure, let it natural release for 15 minutes, then pressure release.
