Peony Jelly Recipe – Fun Edible Flowers!

This recipe for how to make peony jelly is another one of my fun edible flower recipes! I am on a mission to make every edible flower jelly recipe that I can. So far I have made dandelion, redbud, lilac and apple blossom jellies.

Peonies are one of my favorite flowers. They are so beautiful and smell so good, plus they come in so many wonderful colors!

Making jelly from peonies is an easy and fun thing to do and produces a beautiful, floral, delicious jelly. You can taste the peony in the jelly and it is a wonderful taste.

Basic Steps For Making Peony Jelly

  • Pick or cut the peony blossoms from the peony bush
  • Pull the petals off of the flower
  • Add 4 cups boiling water to the petals
  • Add lemon juice
  • Place in refrigerator for 24 hours
  • Strain the petals from the liquid
  • Add liquid to the pot and bring to a boil
  • Next add the powdered pectin, bring to a boil for one minute, and stir continuously
  • Add 4 cups of sugar, stir to dissolve, and boil for 1 to 2 minutes
  • Ladle the jelly into canning jars and water bath can for 10 minutes

Detailed Steps for Making Peony Jelly

Pick the peony flowers from the peony bush. Peony flowers are so big, that it does not take very many! You want 3 to 4 cups of blossoms.

Pull the petals from the flower

Place the petals in a large bowl or quart mason jar.

Pour four cups of boiling water over the petals using a canning funnel.

Add 2 tablespoons of lemon juice to the peony and hot water and after it cools place in the refrigerator for 24 hours.

The next morning, strain the petals from the tea using a fine mesh sieve, coffee filter, or cheese cloth. You should have about 4 cups of liquid. The tea from the pink petals was a light pink.

Add the peony tea to a large pot or saucepan and add a package of powered pectin. Stir it to dissolve the pectin. Heat on high heat and bring to a full boil.

Add 4 cups of sugar slowly to the peony jelly mixture and stir to dissolve.

Bring to a boil for 1 to 2 minutes.

Skim off any foam.

Turn off the heat and ladle the hot jelly into the canning jars. I used 5 half pint jars and 2 4-oz jars. These sizes are often referred to as jelly jars.

Fill the jars to 1/4 inch headspace. Wipe jar rims with a damp cloth or wet paper towel and remove the air bubbles.

Add the jars to the water bath canner and process at a full rolling boil for 10 minutes. I use the Ball electric water bath canner and love it.

Remove the hot jars from the boiling water bath with a jar lifter and place them on a dish towel on the counter. Do not disturb for 24 hours. Note: Sometimes it takes at least a day or more for the jelly to completely set up. Most of the time they are not quite set when you remove them from the canner.

Low Sugar Option

If you want to use less sugar, use low sugar pectin instead of regular and add less sugar to the recipe (as little as 1-½ cups).

Total Time: 35 minutes

A delicious floral sweet jelly made from beautiful peony flowers.

Ingredients

  • Peony petals
  • 4 cups of water
  • 1 package powdered pectin
  • 2 Tbsp. lemon juice
  • 4 cups sugar

Instructions

  1. Pick or cut the peony flowers from the peony bush
  2. Pull the petals from the flower
  3. Add 4 cups boiling water to the petals
  4. Add the lemon juice to the tea
  5. Place in refrigerator for 24 hours
  6. Strain the blossoms from the liquid
  7. Add liquid to the pot and bring to a boil
  8. Next add powdered pectin, bring to a boil for one minute, and stir continuously
  9. Add 4 cups of sugar, stir to dissolve, and boil for 1 to 2 minutes
  10. Ladle the jelly into canning jars
  11. Wipe the rims and remove the air bubbles, add lids
  12. Water bath can and process for 10 minutes at a rolling boil
  13. Remove the jars and place them on a dishtowel on the counter
  14. Do not disturb for 24 hours

Notes

Note: Sometimes it takes at least a day or more for the jelly to completely set up. Most of the time they are not quite set when you remove them from the canner.
