Recipe for Canning Delicious and Easy Beef Stew

This recipe for canning delicious and easy homemade beef stew makes a great home canned ready to eat meal. Having a variety of home canned ready to eat meals on your pantry shelf is a great way to have something to eat at all times. They are good to take camping, take for lunch at work, or just have when you don’t feel like cooking!

There are several reasons that I love to make home-canned beef stew, including that I can make it with whatever and how many of each ingredient that I want. Plus I know exactly what is in the jar, and can avoid excess salt, chemicals, and preservatives found in store bought canned goods.

Ingredients for Making Delicious and Easy Beef Stew for Canning

  • 5 cups beef stew meat
  • 2 1/2 cups cut up carrots
  • 2 1/2 cups cut up potatoes
  • Beef Broth
  • Optional: Any vegetables, such as celery, onions or green beans can be used.
  • Note: This recipe is for 5 pints, that is what my pressure canner holds at one time.

Detailed Steps for Making Delicious and Easy Beef Stew for Canning

Prepare the beef stew meat. You can buy meat already packaged as beef stew meat or cut up a roast. I used beef stew meat and cut it up into smaller pieces.

You can raw pack or hot pack the meat. Raw pack is just adding the meat raw to the jar, hot pack is searing the meat on the outside before adding to the jar. I have canned beef stew using both methods. I feel searing the meat adds much more flavor. I seared the meat this time. Brown beef in a small amount of oil.

Cut up carrots into bite size pieces. I use baby carrots.

Peel and cut up potatoes into bite-size pieces. I soaked my potatoes for 30 minutes and rinsed to remove excess starch.

Add about 1 cup of meat and 1/2 cup of carrots and potatoes to each pint canning jar. Leave one inch head space in each jar.

Add boiling beef broth to each jar up to 1 inch of head space.

Add preferred seasonings, such as salt, pepper, or beef stew seasoning. I added this steak seasoning from Aldi and the stew turned out very delicious.

Wipe rim of the jar, remove the air bubbles, and place lids on the jars.

Beef or any meat are low-acid foods and required to be canned using a pressure canning process. See my article on beginners guide to canning for a complete guide on canning.

Place the hot canning jars into the pressure canner and process according to your canner’s manufacturer’s instructions. Processing time for pint jars is 75 minutes. The canning time for quarts is for 90 minutes.

When the canning process is complete and the canner has had time to depressurize, remove the hot jars with a jar lifter and place jars on a dish towel on the counter and do not disturb for 24 hours.

Ingredients

  • 5 cups beef stew meat
  • 2 1/2 cups cut up carrots
  • 2 1/2 cups cut up potatoes
  • Beef Broth
  • Optional: Any vegetables, such as celery, onions or green beans can be used

Instructions

  1. Cut up the beef stew meat
  2. Sear the meat in a little bit of oil (You can also add the beef to the jar raw, but the flavor is better if you sear the meat first)
  3. Cut up the carrots and potatoes into bite-sized pieces
  4. Add 1 cup of seared beef to each pint jar
  5. Add 1/2 cup each potatoes and carrots to each jar
  6. Double the amounts if using quarts
  7. Add boiling beef broth to each jar filling to 1-inch headspace
  8. Wipe the rims of the jars and add the canning lids
  9. Process in a pressure canner for 75 minutes for pints, 90 minutes for quarts
  10. When the canning process time is complete and the canner has had time to depressurize, remove the hot jars with a jar lifter and place the canning jars of hot beans on a dish towel on the counter and do not disturb them for 24 hours.
