Roses are so beautiful, you just want them to last forever! It is fun to be able to use edible flowers like roses to make something beautiful and delicious, like this wonderful rose petal jelly!

Here are pictures of some of my rose bushes. I have always loved flowers and am so blessed to have the flowers in my yard to make almost every kind of edible flower jelly I can think of!

You can also make this rose jelly from wild roses with wild rose petals.

This article by WEBMD states that rose petals contain Vitamin C, A and E, plus iron and calcium and that rose petals are high in phytonutrients, plant compounds with antioxidant properties.

Basic Steps to Make Rose Petal Jelly

  • Pick or cut the fresh roses from the rose bush
  • Pull the petals off of the flower
  • Add 4 cups boiling water to the petals
  • Add lemon juice
  • Place in refrigerator for 24 hours
  • Strain the petals from the liquid
  • Add liquid to the pot and bring to a boil
  • Next add the powdered pectin, bring to a boil for one minute, and stir continuously
  • Add 4 cups of sugar, stir to dissolve, and boil for 1 to 2 minutes
  • Ladle the jelly into canning jars and water bath can for 10 minutes

Detailed Steps to Make Rose Petal Jelly

Pick the rose blossoms from the rose bush. You will need 2 to 4 cups of fresh rose petals.

Separate the petals from the rest of the flower.

Place the fresh petals in a large bowl or a quart mason jar.

Pour four cups of boiling water over the delicate petals using a canning funnel,

Add 2 tablespoons of lemon juice to the rose water infusion. Fresh lemon juice can be used or bottled lemon juice. After it cools to room temperature, place the rose water infusion in the refrigerator for 24 hours.

The next day, strain the petals from the tea using a fine mesh strainer, cheesecloth or coffee filter. You should have about 4 cups of liquid.

Add the rose petal tea to a large pot or medium saucepan and add a package of powdered pectin. Stir it to dissolve the pectin. Heat on medium-high heat and bring to a gentle boil.

Add 4 cups of sugar slowly to the rose petal jelly mixture and stir to dissolve. Bring to a boil for 1 to 2 minutes.

Turn off the heat and ladle the hot jelly into the canning jars. I used 5 half pint jars and 1 4-oz jar.

Fill the jars to 1/4 inch headspace. Wipe jar rims with a damp cloth or wet paper towel and remove the air bubbles.

Add the jars to the water bath canner and process at a full rolling boil for 10 minutes. I use the Ball electric water bath canner and love it.

Remove the hot jars from the boiling water bath with a jar lifter and place them on a dish towel on the counter. Do not disturb for 24 hours. Note: Sometimes it takes at least a day or more for the jelly to completely set up. Most of the time they are not quite set when you remove them from the canner.

Low Sugar Option

If you want to use less sugar, use low sugar pectin instead of regular and add less sugar to the recipe (as little as 1-½ cups).

A delicious floral sweet jelly made from beautiful rose flowers.

Ingredients

  • 2 to 4 cups of Rose petals
  • 4 cups of water
  • 1 package powdered pectin
  • 2 Tbsp. lemon juice
  • 4 cups sugar

Instructions

  5. Place in refrigerator for 24 hours
  6. Strain the petals from the liquid
  7. Add liquid to the pot and bring to a boil
  8. Next add powdered pectin, bring to a boil for one minute, and stir continuously
  9. Add 4 cups of sugar, stir to dissolve, and boil for 1 to 2 minutes
  10. Ladle the jelly into canning jars
  11. Wipe the rims and remove the air bubbles, add lids
  12. Water bath can and process for 10 minutes at a rolling boil
  13. Remove the jars and place them on a dishtowel on the counter
  14. Do not disturb for 24 hours
