Recipe for Pressure Canning Ground Pork Sausage

This recipe for pressure canning ground pork sausage is great for having cooked pork sausage ready to go for my favorite meal – biscuits and gravy!

Yum! Who doesn’t love biscuits and gravy! Canning pork sausage is a great way to have it ready to make delicious gravy for your biscuits! I use half pint jars which seems to be a perfect amount. I use my jars of canned pork sausage all the time!

Steps for Canning Ground Pork Sausage

The first step is to brown the pork sausage in a skillet. You can can raw sausage, but I prefer to cook it first. One pound of pork sausage equals about 3 half pints canned. I cooked 3 pounds of ground pork sausage in a frying pan.

Remove excess grease and add the cooked pork sausage into the canning jars with a canning funnel.

Poke the sausage down to fill the jar and leave 1 inch head space.

Add hot boiling water to each jar to 1-inch headspace.

Wipe rims of the jars, remove the air bubbles and put the lids and screw bands on.

Canning meat requires canning in a pressure canner because meat is a low acid food. See my article on beginners guide to canning for a complete guide on canning.

Place the hot canning jars into the pressure canner and process according to your canner’s instructions. The processing time for pint jars is 75 minutes (half pint and pint jars) and for quart jars is 90 minutes.

I use the NESCO Electric Pressure Canner for pressure canning. I have included step by step instructions on how to use the NESCO Electric Canner on my website. One good tip is to always add white vinegar to the canner and that makes the jars come out clear without a white coating on the outside.

When the canning process is complete and the canner has had time to depressurize, open the canner lid, remove the hot jars with a jar lifter and place the jars on a dish towel on the counter and do not disturb for 24 hours.

The next day the pork sausage jars will include a layer of fat on top.

The above general method can be used to can a variety of meats including beef, wild game, beef stew, ground beef, pork shoulder and chicken. Canning soups and stews is very similar, basically just smaller pieces of meat and vegetables.

Ground Pork Sausage Canning Recipe

Yield: 8 to 9 half pint jars
Prep Time: 15 minutes
Cook Time: 1 hour 15 minutes
Total Time: 1 hour 30 minutes

Ingredients

  • 3 pounds ground pork sausage (1 pound equals 3 half pints)
  • Boiling water

Instructions

  1. Brown the pork sausage in a skillet and remove excess grease
  2. Add the cooked pork sausage to the canning jars using a canning funnel.
  3. Poke the sausage down to fill the jar. Keep 1-inch headspace
  4. Add boiling water to each jar, keeping the 1-inch headspace.
  5. Remove the air bubbles, wipe the rims of the jars, and add the lids.
  6. Add the jars to the pressure canner and process according to the manufacturer's instructions.
  7. Process time for pint jars is 75 minutes and quart jars is 90 minutes.
  8. When the canning process time is complete and the canner has had time to depressurize, remove the hot jars with a jar lifter and place the canning jars of hot beans on a dish towel on the counter and do not disturb them for 24 hours.
