Delicious Cucumber Relish Recipe for Canning

If you plant cucumber, you have an overabundance of it at some point in time.  Cucumber relish is great for hot dogs, hamburgers, tuna and chicken salad and pasta salads! I use the cucumbers that I inadvertently grow too long and are too big for pickles. I am not sure how they hide so well, but they always do!

Ingredients

- 10 cups shredded cucumber - 4 to 6 bell peppers (orange, red and/or yellow make great color -2 large onions -5 Tbsp canning salt -3 cups apple cider vinegar -3 cups sugar -1 tsp black pepper -1 tsp turmeric -1 tsp celery seed -1 tsp ground mustard

Shred the Cucumber, Peppers and Onions with a Food Processor

Add 5 Tbsp of Salt and Mix thoroughly

Cover the bowl and let sit for 8 to 10 hours

Rinse with cold water, then drain very well, pushing with a large spoon or squeeze with hands to get moisture out

Place in large pot and add sugar, vinegar and remaining ingredients

Stir thoroughly, Bring to a Boil and Simmer for 30 Minutes

Spoon the mixture into canning jars, leave 1/2 inch headspace. This recipe made 5 pint jars

Remove air bubbles, wipe rims and add lids

Hot water bath at a rolling boil for 15 minutes

Remove the jars using a jar lifter and do not disturb for 24 hours
