Lemon Balm Jelly Recipe

Lemon balm is one of my favorite herbs. The smell of it is so refreshing and wonderful and lemony. Lemon balm has many health benefits as do so many herbs, weeds and flowers!

The basic process for making lemon balm jelly starts with picking the leaves. You need 2 to 4 cups of leaves.

 Place the fresh leaves in large bowl or quart mason jar

Add 4 cups of boiling water to the leaves, then add 2 Tbsp of lemon juice. Put the tea in the refrigerator for 24 hours

The next day, strain the leaves from the tea

Add the tea to a large pot and stir in 1 package of powdered pectin. Bring to a boil

Stir in 4 cups of sugar, bring to a boil and let boil for 1 to 2 minutes

Ladle the jelly into jars using a canning funnel. The recipe makes 5 to 6 half pint jelly jars.

Fill the jars to 1/4 inch headspace. Wipe the rims and add the lids.Process in a hot water bath for 10 minutes
