Ingredients

– 20 cups Tomatoes: Chopped with food processor – 1 White Onion: Chopped with food processor – 1 Tbsp Minced Garlic – 2 tsp basil leaves – 2 tsp oregano – 2 tsp thyme – 1 Tbsp Italian Seasoning – 1 Tbsp Lemon Juice per jar – Optional: Add tomato paste to thicken

First rinse the tomatoes and core, as necessary.

Chop tomatoes up finely in a food processor and add them to a large pot. I used a roaster pan, so I could simmer for a long time to thicken the sauce. I do not peel my tomatoes.

Chop the onion in the food processor and add to the pot or roasting pan Add the minced garlic and herbs.

Simmer the sauce to desired thickness. I simmered about 4 hours.

Ladle the hot pizza sauce into canning jars using a canning funnel leaving 1/2 inch of headspace.

Add the canning jars to the boiling water bath and process jars at a full rolling boil for 20 minutes.

Remove the hot jars from the canning pot after the processing time with a jar lifter and place jars on a kitchen towel on the counter. Do not disturb for 24 hours.
