Beautiful Apple Blossoms

The first step is to pick or cut off the apple blossoms. About 4 cups of loose blossoms are good. Then separate the leaves, sticks, and stems. My flower petals included pink flowers and white flowers.

Put the blossoms in a quart mason jar or a large bowl.

Add four cups of boiling water to the apple blossoms.

Add 2 Tbsp lemon juice and let steep in the refrigerator for about 24 hours

The next day, strain the blossoms from the liquid with a fine mesh sieve, coffee filter, or cheese cloth. It should result in close to four cups of apple blossom tea.

Squeeze the remaining liquid from the blossoms. The apple blossom tea I made turned out to be a beautiful yellow color.

Pour the tea into a large saucepan or large pot and add 1 package of powdered pectic. Stir to dissolve. Heat over medium-high heat to a full boil.

Add 4 cups of sugar, bring to a boil and boil for 1 to 2 minutes. Turn off the heat and then ladle the hot jelly into canning jars.

Wipe rims of jars, add lids and water bath for 10 minutes at a rollling boil.
