The basic process for making red clover jelly starts with picking the flowers. You need 2 to 4 cups of petals.
Remove the petals . Place them in large bowl or quart mason jar
Add 4 cups of boiling water to the petals, then add 2 Tbsp of lemon juice
Put the red clover tea in the refrigerator for 24 hours. The next day, strain the flowers from the tea.
Add the tea to a large pot and stir in 1 package of powdered pectin. Bring to a boil
Stir in 4 cups of sugar, bring to a boil and let boil for 1 to 2 minutes
Ladle the jelly into jars using a canning funnel. The recipe makes 5 to 6 half pint jelly jars.
Fill the jars to 1/4 inch headspace. Wipe the rims and add the lids.
Process in a hot water bath for 10 minutes
