This Zuppa Toscana instant pot recipe is one of my favorite recipes! It is also my family’s favorite recipe. My daughters and I used to go eat unlimited soup and salad at Olive Garden a lot and always ordered this delicious soup. When I discovered copycat recipes, it was heaven! I used to make it on the stove top, but it is so much easier in the instant pot. This is my version of zuppa toscana soup. I like the instant pot version the best.
Simple Steps to Make the Instant Pot Zuppa Toscana Soup
- Sauté ground Italian Sausage in olive oil in the instant pot, drain grease
- Add minced garlic and package of bacon bits (Optional to use cooked bacon and to add diced onion)
- Add chicken broth
- Add sliced potatoes
- Select manual setting Instant Pot adjust pressure to high, and set time for 9 minutes. When finished cooking, quick release pressure.
- Stir in kale and heavy cream
- Serve
Ingredients
- Ground Italian Sausage: Optional to use spicy italian sausage or mild italian sausage
- Olive Oil
- Bacon Bits: Optional to add cooked bacon
- Minced Garlic – Can use garlic clove
- Chicken Broth
- Potatoes: russet potatoes work well
- Chopped Kale
- Heavy Cream – Half n Half could be used
- Optional: Add red pepper flakes
Detailed Steps to Making Instant Pot Zuppa Toscana Recipe
Turn Instant Pot to sauté mode. Add 1 Tablespoon olive oil, heat and then add the ground Italian sausage and cook until browned.

When the sausage is browned, add the garlic and bacon bits. Make sure the sausage is broken up into smaller pieces. A wooden spoon works well. Drain grease if necessary. Add the chicken stock and scrape the bottom to make sure no remnants are sticking. Cut up the potatoes into small pieces, either slices or diced.

Add the potatoes to the instant pot.

Select manual setting and adjust pressure to high, and set time for 9 minutes. After cooking on high pressure, quick release the pressure.
Add the fresh kale and heavy cream and stir. Then serve! Parmesan cheese is a great topping!

Delicious version of the Olive Garden Zuppa Toscana soup. Great recipe with simple ingredients and so easy cooked in the instant pot.
Ingredients
- 1 pound Italian Sausage
- 1 Tbsp. Olive Oil
- 1 package 2.5 oz. bacon bits (Optional to add cooked bacon)
- 2 tsp minced garlic
- 8 cups chicken broth
- 3 medium potatoes, sliced and diced
- 1 -2 cups chopped Kale
- 1/2 cup heavy cream
- (Optional ingredients: Diced or minced onion, red pepper flakes)
