Detailed Steps for Making Green Tomato BBQ Sauce for Canning
The first step is to rinse and cut up the tomatoes and puree in a food processor and then add to a large pot.

Add the peppers and onion to the food processor and chop them very fine. If you touch the inside of the hot peppers, wear gloves. This jalapeno corer works great! Add all of the chopped ingredients to a large pot.

Add remaining ingredients to the pot. Use an immersion blender if desired to make the BBQ sauce more smooth.

Use an immersion blender if desired to make the BBQ sauce more smooth.
Heat over medium-high heat to a slight boil and then let simmer for about 15 minutes on low heat to allow the flavors to develop into a delicious sauce and to help reduce and thicken the sauce.
Ladle the hot BBQ sauce into canning jars using a canning funnel. Leave a 1/4 inch headspace.

Wipe the rim of the jar with a damp rag, remove the air bubbles and add the lids. Add the canning jars to the boiling water bath and process jars at a hard boil for 20 minutes. I use the Ball electric water bath canner and love it.
Remove the hot jars from the hot water bath after the processing time with a jar lifter and place jars on a kitchen towel on the counter. Do not disturb for 24 hours.

Enjoy!
